Applications:
Lactic acid powder, as an acidulant, is used for direct acidification in the production of sourdough products to control the acidity of the dough, act against mould and improves the sourdough flavor. Lactic acid powder can also be used in candy making to improve flavor and reduce sugar conversion. Lactic acid powder is also used for acidification of mild-flavored powder drinks.
