5,Character:It is white monoclinic crystalline powder, odorless; soluble in dilute hydrchloric acid, nitri acid and acetum, slightly soluble in water; insoluble in ethanol. Stabilizing in air. Relative density is 2.32.
6,Usage: In food industry, it is used as leavening agent ,dough modifier ,buffering agent, nutritional supplement, emulsifier, stabilizing agent .
